Pea and Lettuce Soup
Great day today with a client we made Pea & Lettuce Soup from his choices.
Here is the recipe
200 grams frozen peas
1 medium leak
½ diced white potato
3 – 4 lettuce leaves of your choice
½ pint stock made with 1 heaped spoon of vegan stock powder and ½ pint of hot water
Prepare the vegetables by washing and cutting into small pieces, leave the skin on the potato for added nutrition and fibre.
Put a splash of olive oil in a saucepan and heat taking care not to burn.
Sauté the potato and leak in a little olive oil for about 5 minutes stirring now and again
Add the peas and ½ pint of stock and bring back to the boil then turn down the heat to simmer gently
Cook until the potato is soft.
Add in the lettuce and cook for another minute
Spoon ingredients into blender and then pour in remaining liquid being careful not to overfill the blender.
Blend until smooth
You could garnish with parsley, chives or mint adding in a little cream or similar if wanted.
